Like any journey, first we have to decide where we want to go. After watching Forks over Knives we decided we wanted to cut out as much meat as we can. This documentary also says we should avoid dairy and eggs but right now we are not prepared to do that. We currently do not eat a ton of meat. Chicken and turkey mostly. We have decided not to totally eliminate meat but rather cut down to once or twice a week. The girls like ham and cheese for school lunches and our son likes chicken nuggets so that is something we will need to work on changing.
We are looking into fish. Neither one of us cares much for fish but we think putting fish in place of chicken might be good for a couple of meals throughout the month.
We are still researching eggs. So much conflicting information out there. Right now I don;t eat many eggs but my husband has been eating them almost daily.
Other things I need to research include milk and a sugar substitute. I drink coffee, I enjoy coffee, I do not plan on giving up coffee any time soon. I have cut back on milk and sugar that I put in my coffee but I still need milk and sugar in my coffee. Milk and sugar both have substitutes out there but the costs are rather high.
However, making a lot of things from scratch might balance out these costs and the costs of more fresh fruits and veggies.
So, where did we decide to go? Not totally sure yet but we do know a general direction. 1.Reduce our meat intake. 2.Cut out processed foods as much as possible. 3.Cut back on sugar/corn syrup filled products

Background and starting to map
A little about myself. I am a busy mom of 3, step mom to 1, wife to a great husband, student, PTA president at the elementary school, Girl Scout leader of two troops, and I am busy, did I mention that? I never really learned how to cook or how to eat for that matter. It seems like the "experts" never agree with each other and always change their minds.
I have been wanting to eat healthier for a while now but besides not knowing what that means, I have been scared about costs, time consumption, and having my husband actually eat what I cook.
We just got a Wii for xmas and got Netflix. We have been watching a lot of documentaries and finally my husband is on board. We decided it was time to start eating better. We are getting older and need to worry about things like health and weight. We owe it to each other and our kids to make sure we are healthy.
So now we are mapping out our path. I am nervous but excited. My sister feeds her family in a way we are hoping to so she is helping me out.
We still have some things to research but we are started on a new journey! I hope I can help at least one person find their own journey. I also hope that blogging helps me stay organized and on track!
